Taco Bell Mexican Pizza Remake

Howdy folks, and thanks for stopping by the website! We have had a lot of requests for a remake of the Taco Bell Mexican Pizza. We are happy to oblige!

We decided to stay close to the original but we want to make it a little bigger, with more meat and cheese and lots of flavor. If you’re looking for the free printable recipe, scroll on down to the bottom. The rundown of what we did to improve on this classic is right ahead.

Taco Bell Mexican Pizza

Start out by heating up a 12″ or larger cast iron skillet with about 1″ of fry oil. Dust a 12″ flour tortilla with corn masa and gently lay in the oil until the tortilla turns golden brown and crispy. Flip the tortilla over when the first side is done. Shake the tortilla off a little bit when you pull it out of the skillet, and set aside.

Why corn masa? It adds some authentic Mexican flavor to that crunchy tortilla!

The Mexican Pizza Beef & Bean Filling Remake

The filling of a Mexican pizza is a mix of taco meat and refried beans. Start with some 80/20 Certified Angus Ground Beef. Cook it up with a small diced onion, some Original Seasoning and Taco Seasoning. If you don’t have our seasoning laying around, you can substitute with salt and pepper and any taco seasoning.

Tip: Mix shredded cheddar cheese into the beef and onion mixture so it’ll hold the meat together inside the tortillas.

In a saucepan, mix refried beans, sour cream, and some hot sauce. When well incorporated, set aside. It’s almost time to assemble the Mexican Pizza!

Taco Bell Sauce

I wasn’t a huge fan of the sauce packets from Taco Bell. I wanted to make a more flavorful sauce, so I mixed up some green chilies and spices with red pepper flakes and a touch of vinegar. Simmer for 2 minutes or so, and then blend in a blender until smooth.

How to Assemble a Mexican Pizza

Spread the refried  bean mixture onto the bottom crispy tortilla, Top with the meat and add an extra layer of cheese on top. Spread the sauce over the cheese. Cover with the second tortilla. Cover with sauce, cheese, tomatoes, and jalapenos. If you have some guacamole laying around, go for it.

Taco Bell Mexican Pizza – Cowboy Kent Rollins

Ingredients

  • 1 lb. 80/20 ground beef
  • ½ tablespoon Kent’s Original seasoning or salt and pepper
  • 1 small white onion finely chopped
  • 1 tablespoon plus 2 teaspoons Kent's Taco Seasoning or your favorite taco seasoning
  • 1 ½ cups shredded cheddar cheese divided
  • 4 9-inch flour tortillas
  • Corn masa for sprinkling
  • Oil for frying
  • 1 8 ounce can tomato sauce
  • 1 4.5 ounce can diced green chilies
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon red pepper flakes
  • 1 teaspoon white vinegar
  • 1 16 ounce can refried beans
  • 2 tablespoons butter
  • 2 – 3 tablespoons sour cream
  • 1 cup shredded mozzarella
  • 2 roma tomato finely chopped
  • 2 jalapenos thinly sliced

Instructions

  • In a medium cast iron skillet, add the ground beef over medium heat. Season with Original Seasoning, or salt and pepper. Cook until the meat begins to brown, stirring occasionally.
  • Stir in the onion and1 tablespoon taco seasoning. Continue cooking until the meat has completely browned. Stir in ½ cup of cheddar cheese and stir just until melted. Set aside in a warm spot.
  • In a large cast iron skillet, pour about ½ to ¾-inch of the fry oil in and heat to 350 degrees F. over medium-high heat.
  • Sprinkle the corn masa on both sides of a tortilla and shake off any excess. Fry until a light golden brown on each side, and place on a wire rack to cool. Repeat with the remaining tortillas. Be careful not to over cook the tortillas. They should be lightly crisp around the edges, but still pliable in the middle.
  • In a small saucepan combine the tomato sauce, green chilies, smoked paprika, cumin, garlic powder, onion powder, pepper flakes and vinegar. Bring to a simmer stirring frequently. Pour the contents into a blender and blend until smooth. Set aside.
  • In a medium saucepan over medium heat add the beans, and stir well, then add the butter, sourcream, and seasoning and stir well, cook for about 3 to 4 minutes, or until heated through.
  • Spread a layer of the beans on a tortilla, followed by meat, sauce and about ½ cup of the mixed cheeses. Top with a tortilla. Spread an even layer of sauce on top, followed by about ½ cup of mixed cheeses and jalapenos. Repeat to assemble the other pizza.
  • Place the pizzas on a baking sheet and into a preheated oven to 350 degrees F. Bake for about 4 minutes, switch the oven to broil and broil just until the top cheese melts. Remove from the oven, top with tomatoes and serve.
