
Loaded Breakfast Fries
Lets revolutionize the way you make breakfast! These loaded breakfast fries will stick to your ribs. We’re going to take some of your favorite breakfast ingredients and stack them up on top of waffle fries. This makes a great Sunday breakfast or a great meal if you’re having breakfast for dinner (which is one of my favorite things to do during the week!).

Easy & Hearty Breakfast Idea – Two Ways
I’m always looking for ways to save time and money without sacrificing flavor. Frozen potatoes are a great way to save a ton of prep. Grab a bag of frozen waffle fries from your local grocer – seasoned, if they have them. The rest of the ingredients are ham, bacon, American cheese slices, and eggs. If you prefer sausage patties or chorizo instead of ham, or cheddar instead of American, you go ahead and change this up however you want.
This is a great meal to make on a griddle – we’re using our Blackstone – but you can use an indoor tabletop griddle just as well. Preheat your griddle to medium heat.
Individual Stackers
Get your ingredients prepped ahead of time. Take the waffle fries out of the ice box about an hour before you plan to start cooking. Slice the bacon in half and cut the ham down to size.
Tip: Cut the center of the ham out with a cookie cutter so it will fit on the waffle fry. Save the extra ham and cook it up tomorrow with an egg inside – like an Egg in the Hole, but with ham instead of bread.
Start by frying the bacon. When that bacon is finished, cook the waffle fries and ham in the bacon grease. When the bacon and ham are cooked to your liking, set them aside.
In the meantime, flip the waffle fry until it’s good and crispy all over. Place a slice of cheese on top of the fry. Stack the bacon and another slice of cheese, and ham. Crack an egg onto your greased skillet and when it’s cooked to your liking, place it on top, season with salt and pepper, and eat! You can top these with our salsa, pico de gallo, enchilada sauce, or taco sauce. We used The Fresh Chile Company’s 575 Taco sauce, and it tastes delicious.
Family Style
For a family style version of this recipe, dice up the ham and bacon and cook those first. Toss in the waffle fries and cook until everything is crispy. Move to the side and scramble some eggs. Mix the eggs into the bacon, ham, and waffle fry mixture, and top with cheese. Serve with your favorite hot sauce or taco sauce!

Loaded Breakfast Fries (Patty Version) – Cowboy Kent Rollins
Ingredients
- 2 large thick-cut slices ham
- 12 to 18 large seasoned waffle fries thawed
- 4 slices thick-cut bacon cut in half
- 8 slices American cheese
- 4 large eggs
- Coarse ground black pepper for seasoning
- Salsa for serving
Instructions
- With a biscuit cutter, cut 4 rounds out of the ham. Note: the leftover ham that has been cut out can be used for egg in a hole recipe. Use ham instead of bread.
- Place the bacon and ham circles on the preheated griddle over medium-high and cook until browned, then slide to the cool zone of griddle.
- Reserve the bacon grease, and place the waffle fries in the grease and cook until cooked through and crispy, about 2 to 3 minutes per side.
- Arrange the waffle fries to make 4 patties (about 3×5 inches), on the warm side of the grill. Place one slice of American cheese on top of each patty.
- Lay 2 cut slices of bacon on top of the cheese, followed by a ham circle and additional cheese slice.
- Return to the hot side of the griddle and fry each egg until desired doneness.
- Top each patty with an egg, season with pepper, drizzle with salsa, if desired and serve immediately.
Loaded Breakfast Fries (Family Style) – Cowboy Kent Rollins
Ingredients
- 2 large thick-cut slices ham
- 2 lbs frozen seasoned waffle fries thawed
- 6 slices thick-cut bacon
- 2 cups shredded cheddar cheese
- 6 large eggs
- Coarse ground black pepper for seasoning
- Salsa for serving
Instructions
- Place the bacon and ham on the preheated griddle over medium-high and cook until browned. Let cool slightly and dice the ham and bacon. Move to the warm side of the griddle.
- Reserve the bacon grease, and place the waffle fries in the grease and cook until cooked through and crispy, about 2 to 3 minutes per side.
- Meanwhile, scramble the eggs.
- Top the fries with the bacon, ham, 1 cup of cheese and eggs. Sprinkel with additional cheese.
- Shut the lid and let cook a few minutes to let the cheese melt. Season and serve immediately topped with salsa, if desired.
