Loaded Breakfast Fries (Family Style) - Cowboy Kent Rollins

Ingredients

  • 2 large thick-cut slices ham
  • 2 lbs frozen seasoned waffle fries thawed
  • 6 slices thick-cut bacon
  • 2 cups shredded cheddar cheese
  • 6 large eggs
  • Coarse ground black pepper for seasoning
  • Salsa for serving

Instructions

  • Place the bacon and ham on the preheated griddle over medium-high and cook until browned. Let cool slightly and dice the ham and bacon. Move to the warm side of the griddle.
  • Reserve the bacon grease, and place the waffle fries in the grease and cook until cooked through and crispy, about 2 to 3 minutes per side.
  • Meanwhile, scramble the eggs.
  • Top the fries with the bacon, ham, 1 cup of cheese and eggs. Sprinkel with additional cheese.
  • Shut the lid and let cook a few minutes to let the cheese melt. Season and serve immediately topped with salsa, if desired.
