Place the bacon and ham on the preheated griddle over medium-high and cook until browned. Let cool slightly and dice the ham and bacon. Move to the warm side of the griddle.
Reserve the bacon grease, and place the waffle fries in the grease and cook until cooked through and crispy, about 2 to 3 minutes per side.
Meanwhile, scramble the eggs.
Top the fries with the bacon, ham, 1 cup of cheese and eggs. Sprinkel with additional cheese.
Shut the lid and let cook a few minutes to let the cheese melt. Season and serve immediately topped with salsa, if desired.
