Potato Crust Skillet Breakfast

We love one-stop breakfasts at our house. Tater tots make a great bottom crust on this egg bake, and the sky is the limit on any additions you’d like to add to this hearty skillet breakfast.

Makes about 6 servings
Ingredients
4 strips thick-cut bacon
8 oz. ground sausage (about 1 cup)
¾ cup diced onion
Cooking oil (optional)
4 cups frozen store-bought tater tots
Salt and black pepper to taste
1 (4 oz.) can chopped green chiles
6 large eggs
2 tablespoons mayonnaise
1 teaspoon smoked paprika
¾ cup shredded cheese (cheddar, pepper jack, etc.)
Preheat the oven to 350 degrees F. Cut the bacon into 1-inch pieces. Cook over medium heat in a 10″ cast iron skillet until ¾ cooked through. Remove the bacon and place on a paper towel, reserving the grease in the skillet. Return to the skillet and cook the sausage over medium heat. When the sausage begins to brown stir in the onion and continue cooking until the onions are tender and the sausage has cooked through. Spoon the sausage and onion out and place with the bacon, reserving the grease in the skillet. There should be about 2 tablespoons of grease left, if not add a little cooking oil to the skillet. Place the tater tots in the skillet and cook covered over low heat, stirring occasionally for 3 to 4 minutes or until softened. Remove the skillet from the fire. Spoon 1 cup of taters out of the skillet and place on a paper towel. With a flat spatula, mash the tater tots in the skillet to form a crust. Sprinkle the bacon and sausage over the potato crust. Salt and pepper to taste. In a small bowl, whisk together the green chiles, eggs, mayonnaise and smoked paprika. Pour over the skillet mixture. Crumble the remaining 1 cup of tater tots over the top. Place in the oven for 25 minutes. Remove the skillet from the oven and sprinkle with the cheese. Continue cooking an additional 3 – 5 minutes or until the cheese has melted and eggs are cooked through. Serve hot.
Serve with ketchup, hot sauce, etc. Feel free to spice this dish up a little with jalapenos, chopped peppers or anything else y’all would like to throw in.
