Mozzarella Sticks

This recipe is fast, easy on your budget, and so delicious you won’t even want to order them at a restaurant anymore. Go on and get your oil hot – I can’t wait another minute!
The Best Cheese Sticks You’ve Ever Had
Get your Dutch oven on the stove or the fire and preheat the oil to 375. All you’ll need is about four inches or so of oil. These are a real quick fry. We’ll crisp up the breading and get those babies out of there before the cheese starts to lose its shape.
For the breading, use some Italian seasoned bread crumbs, but don’t stop there. Add more Italian seasoning. We want to taste these flavors when they’re done.
Add some course ground black pepper, garlic powder, and if you like some heat, add some crushed red pepper flakes. We’re going to keep the spices and bread crumbs separate from the flour mixture. You’ll see why when you give these a taste.
In another bowl, combine the flour, baking powder and corn starch.
Tip: Corn Starch will help the batter stick to the cheese – the baking powder will give the crust a little pop.
Grab another bowl for the egg wash. Add the eggs and water and mix up.
Now for the cheese. Traditionally, these are made with mozzarella and dipped in marinara. Folks, you can use whatever kind of cheese you want, as long as it isn’t too soft. Cheddar dipped in ranch, Pepper Jack dipped in Guacamole – the combinations are endless. Get a block of cheese and put it in the freezer for 15-30 minutes.
Tip: Freeze the cheese for 15-30 minutes before frying. This will give the breading a little more time to crisp up before the cheese loses it’s shape.
Slice the cheese into equal sized sticks. You’ll probably want the cheese to be as thick as a piece of string cheese. If you have different sized cheese blocks, just make sure that all the pieces are about the same size.
Assemble the Cheese Sticks
Get your station ready and arrange your bowls: Flour mixture, egg wash, bread crumbs. Start by rolling the cheese stick in the flour. Get as much as you can on it, then quickly move it to the egg wash. Coat it really well. Next, move it to the bread crumbs. Again, get all sides coated really well. This will ensure a crispy crust that will hold the cheese inside. Place on a wire rack.
When you’re done with all of the sticks, place the cheese sticks in the fryer. Keep them apart so they don’t stick together. These fry very fast. I’m talking about 90-120 seconds – not much longer than 2 minutes. You could always re-dip them into the breadcrumbs and fry them for a few more seconds.
If the oil temperature gets above 375, turn the heat down for a bit. These turn out perfect but a lot is riding on you getting them in and out of that oil at the right temperature and for no more two minutes.

Fried Mozzarella Cheese Sticks – Cowboy Kent Rollins
Ingredients
- 16 ounce block Mozzarella cheese
- 2 large eggs
- 2 tablespoons water
- 1 cup bread crumbs
- 1/2 tablespoon garlic powder
- 1/2 tablespoon ground black pepper
- 1 tablespoon iItalian seasoning
- ⅔ cup all-purpose flour
- ⅓ cup cornstarch
- Oil for frying
Instructions
- Cut the cheese into about ½ to ¾-inch thick strips. Place in the freezer for 30 minutes.
- Meanwhile, in a small bowl, whisk together the eggs and water.
- In a separate bowl, combine the bread crumbs, garlic powder, black pepper and mix well.
- In a third bowl combine the flour and cornstarch.
- Coat the cheese sticks well with the flour mixture followed by the egg wash then coat generously with the breadcrumb mixture. Place on a wire rack for 5 minutes.
- Add about 3 inches of oil to a Dutch oven or deep fryer and heat to 375 degrees F
- Fry the cheese sticks, a few at a time, for about 45 seconds or until a deep golden brown. Place on a wire rack and serve warm.
