Best Ever Grilled Cheese
You ever wondered why it’s called a grilled cheese sandwich when it’s typically not even cooked on the grill? Tell you what – we’re going to grill this and show you how to make the best ever 4 CHEESE OOEY GOOEY goodness.
I did a lot of research about grilled cheese sandwiches and which cheeses I needed to use to give the best melty, pull-apart cheese spread and also the best taste.
Are You Bready for This?
We know we’re going to have cheese, but the vessel that this cheese lays upon is important, too. I prefer a thick-cut Texas Toast, or sourdough would be another good choice. But y’all use whatever you prefer.
Say Cheese!
I can hear some of you say, “Oh no! Cowboy Kent, you can’t be breaking out that ol’ processed cheese!” Folks, I found this American cheese makes a grilled cheese sandwich cheesier, so you’ve got to have it.
We’ve also got shredded cheddar, mozzarella and pepper jack. There can’t be too much cheese on a grilled cheese sandwich!
Let’s Get it Going!
The grill is preheated, cleaned, and smoking hot. Then turn it all the way down to low.
Now, a lot of people like to just spread that butter on there, but I’m going to put some melted butter on the bread because it soaks in so much better.
We’re not going to place the bread directly on the hot grill but on the rack above. If you don’t have a rack, don’t preheat your grill to hot, instead just start at the low heat so it’s doesn’t burn.
Lay the slices on the elevated surface of the grill buttered side down. I want it to get hot but also let that butter to incorporate there. We ain’t shutting the lid. Go ahead and butter the top side of the slices and we just want the bottom side of the bread to crust lightly, but not really brown.
Here Comes the Cheese
Flip that bread over and give every slice a piece of that American cheese. Next, add the shredded mozzarella, cheddar and pepper jack cheeses only to the bottom slice of the sandwich.
Now, this is really going to add some great flavor- grate you a little of that jalapeño on top, to taste. Trust me!
Go ahead and put the sandwiches together and shut that lid. Remember, that grill is still on low. We just want that cheese to go to melting.
As the cheese begins to melt, you can add some more butter on the bread and flip it. Butter again, and give it a little dusting of garlic powder for some good flavor.
Now you’ll put those sandwiches straight on the bottom part of the grill because we’re going to get some good grill marks and crunch.
When you get to the point where your sandwich has a little char to it, I’ve got one more surprise for you – some Parmesan. Give it a little more butter, and then a good coating on top with the grated Parmesan.
Just keep it on the heat until you get the grill marks how you like them.
Doing this on the grill really does give this a unique flavor and you can’t beat the crunch and light char the grill gives these.

Best Ever Grilled Cheese - Cowboy Kent Rollins
Ingredients
- 8 slices bread Texas Toast suggested
- 1 – 1 ½ sticks butter melted
- 8 slices American cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- 1 cup shredded mozzarella cheese
- 1 – 2 jalapenos grated
- Garlic powder
- Grated Parmesan cheese
Instructions
- Preheat the grill to hot. Turn it to low before adding the sandwiches.
- Brush the outer side of each slice of bread with butter. Place the slices, buttered side down, on the top rack of the grill. Note: if you don’t have a top rack, do not preheat your grill to hot, just turn to low heat and grill directly on that.
- Butter the top side of each slice. Continue grilling until a light crust forms on the bottom side and some of the moisture dries out. Flip.
- Top each slice with the American cheese. Then top each bottom side of the sandwich with about ¼ cup of cheddar, ¼ cup pepper jack and ¼ cup of mozzarella.
- Top each bottom slice with the jalapeno (optional, but it really adds great flavor!)
- Take the top sandwich slices (with only the American cheese slicand place on top of the bottom slices. Shut the grill lid and cook about 2 ½ to 3 minutes, to allow the cheese to melt.
- Butter the tops of the sandwiches. Flip the sandwiches and give them a slight mashing with the spatula. Butter the top sides. Shut the lid and continue to cook for 2 minutes.
- Butter the top sides of the sandwiches again and sprinkle with garlic powder, to taste. Flip over and place on the lower grill over low heat. Cook until darker grill marks appear and then flip.
- Brush the tops with butter and sprinkle with the Parmesan cheese, to taste. Continue cooking until grill marks have formed on the underside of the sandwiches. Serve immediately
