Cowboy TV Dinner Remake - Meatloaf

When I was growing up, those little aluminum TV dinners were a treat. You remember the ones, where you pull the foil back and everything has its own little compartment. There would be a scoop of mashed potatoes, maybe a spoonful of peas, and a brownie that somehow managed to cook right alongside the meatloaf. I thought that was the height of convenience. But folks, the truth is, nothing beats making a real homemade version, cowboy style, right from scratch.

The Best Meatloaf I've Ever Had

To start, grab a good-sized bowl and add your ground beef. Mix in your eggs, and sprinkle in some of our Lower Sodium Original Seasoning, because even when you are cutting back on salt, you should never cut back on taste.

In a hot skillet, sautee the chopped bell peppers, hatch green chilies, and onion in butter until slightly softened.


Reduce the heat to low and stir in the ketchup, Worcestershire, horseradish, hot sauce, and cayenne. Season with salt and pepper to taste and simmer for a few minutes to let the flavors combine. You may want to add more of the seasonings to your liking.

Remove the peppers and onions from the heat and let cool for about 5 minutes. Stir in the milk and slowly begin stirring in the bread crumbs until the mixture is like a thick paste.


With your hands, gently begin mixing the pepper mixture into the meat until combined. You may want to add a few more bread crumbs at this point if the mixture is too wet.

Tip: Mix your meatloaf gently. Overmixing can make it dense instead of tender.

Shape the meat mixture into two equal parts. Press it together just enough to hold its shape into two different loaf pans.


Then, before it heads to the oven, whip up the hot honey sauce that gives this loaf its classic shine. Mix together the Cowboy ketchup, horseradish, honey, and hot sauce to taste. 


Brush the hot honey all over the top of the meatloaf, so it can caramelize into that beautiful glaze while it bakes.

Tip: Leave a small edge around the pan so the heat can circulate evenly and brown the sides.

When the meatloaf comes out, it smells like home. Slice it thick and serve it up with the mashed potatoes, corn, and brownie. You've got yourself a meal that is a plate full of comfort that takes you back in time but tastes a whole lot better than anything that ever came from a freezer.
