Dark Beer Chili

Some folks will tell you chili ought to be simple, and others will say it is all about what you add to it. This chili leans into bold flavor by using dark beer and smoked spices. I am not much of a dark beer drinker, but when it comes to cooking chili, I have been told for years that this is the way to go. So we put it to the test.

Rich, Hearty Flavors Make a Bold Chili

Brown ground beef with onion and seasoning in a heavy pot until the meat is fully cooked and the onion is tender.


Add drained diced tomatoes with green chilies, followed by kidney beans added with their liquid. Stir to combine.


Season with cumin, smoked paprika, ground mustard, Mexican oregano that has been crumbled, and chili seasoning. Stir well so the spices are evenly distributed.

Pour in dark beer and stir until everything is incorporated.


Set the pot over medium heat, bring it up gently, then reduce to a simmer. Cover and let it cook for about 45 minutes, stirring occasionally so nothing sticks.
