Cinnamon Rolls with Stewed Apples

Cinnamon rolls are a Christmas classic, but we are giving them a little cowboy twist with warm apples bubbling up from the bottom. These rolls require no yeast and no rise time, which means you can have a pan of warm sweetness ready before the wrapping paper even hits the floor.

Stewed Apples for the Cinnamon Rolls

Tip: A no rise dough is perfect for busy holidays when you want homemade without waiting.

Start by cooking peeled and sliced apples in butter with both sugars and a splash of cream. This creates a rich filling that goes right in the bottom of the baking dish. Save a little to spoon across the top of the rolls later. As the rolls bake, that apple mixture will bubble up and make everything ooey gooey.

Tip: Use a dish with enough depth so the apple mixture can rise without spilling.

For the dough, mix flour with baking powder, a little sugar, and a touch of cinnamon. Crumble in softened butter until the texture looks like coarse crumbs. Add cream until the dough comes together in a soft ball that does not stick too much to your hands. Roll the dough out into a rectangle.


Brush the dough with melted butter. Then cover it with brown sugar, white sugar, and cinnamon. Add a thin line of the apple mixture straight down the center. Roll the dough up tightly into a log and slice into even pieces.

Tip: Flour your board well before rolling so the dough glides instead of tearing.

Place the rolls on top of the apple mixture in the baking dish. Spoon a little cream over each one to keep them extra tender. Bake until lightly brown and puffed.


When they come out of the oven, finish them with a simple icing of butter and cream cheese, flavored with vanilla or almond extract. Both bring out the warm spices and the apples in the rolls.

Tip: Let the rolls cool just a minute before icing so the frosting melts slowly instead of running off.

These cinnamon rolls are quick, festive, and filled with the smell of Christmas morning. They will bring any sleepy head out of bed and straight into the kitchen.
