We love a good bologna sandwich when we don’t feel like cooking at the end of a long day. Bologna is an iconic American comfort food. As a child, I enjoyed getting bologna boats from the cafeteria at lunchtime. What’s a bologna boat? Stay tuned – you’ll love how delicious and simple this recipe is.

All-Beef Bologna

Start by getting some thin sliced all-beef bologna. Grab a knife and score the bologna – about four small cuts around the slice will prevent it from curling up while cooking. It will also help you build your bologna boat!

Tip: Brown the bologna slices using a grill or cast iron skillet. This will give the bologna boats more flavor.

Brown the bologna slices for 2 minutes on each side over medium heat.

Tip: Grill up an extra slice or two for any pups that might be helping you cook today!

How to Make a Bologna Boat

To make a bologna boat, you need a hamburger bun or two slices of bread. Take a slice of cheese and place it on the bottom slice. Cut a rectangle into the top piece of bread using a kitchen knife. Press the slice of bologna, center first, down into the hole. It should form into a bowl. You’ll put some goodies in that bologna bowl before we’re through.

Once you’ve made your boats, it’s time to fill them with the goodies. I’m making two different kinds of bologna boats because they can be filled differently.

Bologna Boat #1: Mashed ‘Taters

I’m starting with grated pepperjack cheese in the bologna boat. Add mashed potatoes in the center. Top with green onions and bacon bits. Preheat the oven to 350 and cook until the bologna boat is browned and the cheese is melted.

Bologna Boat #2: Mac ‘N Cheese

For the second boat, we decided to try and stuff it with Macaroni & Cheese. As with the mashed potatoes, top with green onions and bacon bits. Preheat the oven to 350 and cook until the bun is toasted and the cheese is melted.

The mac and cheese won our family’s taste test!

The family can come together and make these at dinner time. The little ones can help by picking toppings and “filling the boat.” This recipe brings back a lot of good childhood memories, and I hope to see that passed down to the next generation.

Bologna Boats - Cowboy Kent Rollins

Ingredients
  

  • 4 slices thick- cut beef bologna
  • 4 hamburger buns
  • 4 slices cheese American, Gouda, Provolone, etc.
  • 1/2 cup shredded pepper jack cheese
  • ¾ cup mashed potatoes or macaroni and cheese warmed
  • Chopped green onion for topping
  • Bacon bits for topping

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Score the outside edges of the bologna with a knife, to prevent the meat from curling up when heating. Place the bologna in a cast iron skillet or hot grill and cook just until the bologna is charred or fried slightly to bring out the flavor. Remove from the heat.
  • Remove the top bun and cut about a 2-inch square out of the bun. Discard the cut portion.
  • Place 1 slice of cheese on the bottom bun and replace the top bun. Stuff the bologna in the cut- out hole. Grate about 1 to 2 tablespoons of pepper jack cheese on top of each slice of bologna.
  • Stuff each hole with about 2 to 3 tablespoons of mashed potatoes or macaroni and cheese.
  • Sprinkle the tops with green onion and bacon bits.
  • Place the boats on a baking sheet and bake for about 5 to 10 minutes, or until the buns are lightly toasted and the ingredients warmed through.
