Stuffing Stuffed Bell Peppers

If you still have leftover turkey and dressing hanging around, this recipe gives them a home. These stuffed peppers are hearty, cheesy, and full of all your favorite holiday flavors. It is one more way to clean out the fridge without feeling like you are eating the same thing twice.

Preparing the Peppers

Halve your bell peppers and set them on a warm grill or skillet just long enough to soften. The idea is not to cook them all the way through, but to give them a head start so they bake up tender.
Tip: When picking peppers, choose ones that can stand up straight for easier stuffing.

Mixing the Filling

Chop up leftover turkey. Add it to a bowl with your leftover dressing. Dice a jalapeno and stir it in for a little heat. If the mixture seems dry, add just a splash of chicken broth until it holds together when pressed.
Tip: Add broth a little at a time. You only need enough so the mixture forms a ball.

Stuff the Peppers

Spoon the mixture into the softened pepper halves and set them into a baking dish. If a pepper leans or wobbles, nestle it against another. Bake until heated through, then top with your favorite cheese. Cheddar, mozzarella, or pepper jack all melt well.

Serve

These stuffed peppers are warm, flavorful, and full of that Thanksgiving comfort. They slice easily and make a beautiful dish that feels brand new even though it was built from leftovers you already had.
