Cranberry Orange Coconut Cookies

This has become one of our all-time favorite holiday cookies. It’s a soft cookie that has a great sweet and tangy flavor. Perfect for a holiday cookie exchange or sharing with Santa! 

Cranberry Orange Coconut Cookies

Servings 15 cookies

Ingredients
  

  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking powder
  • 1 stick butter softened
  • 1 cup sugar
  • 1 large egg
  • 1 tablespoon grated orange peel
  • ½ teaspoon almond extract
  • ½ heaping cup grated coconut
  • ¾ cup cranberries chopped

Instructions
 

  • Preheat the oven to 350 degrees F. with a rack in the middle.
  • In a bowl, mix together the flour and baking powder. Set aside.
  • In a separate bowl, cream together the butter and sugar. Then whisk in the egg.
  • Mix in the orange peel followed by the almond extract, coconut and cranberries.
  • Slowly add the flour mixture to the wet mixture until combined.
  • With your hands, form the dough into about the size of golf balls (flour your hands if needed). Place on an ungreased cookie sheet and press down slightly in the middle of each ball.
  • Cook for about 12 - 15 minutes, or until the bottoms are a light golden brown. Let cool on a wire rack.
