Onions from the Hatch Valley and surrounding area are as sweet as any of the well-known varieties... and sweeter than most. This dressing combines Hatch onions, avocado oil, and our very own Hatch green chile dijon mustard. This dressing is so good you can marinate, baste, or douse your salads and fruit.
