
Poor Man's Sausage
It's a Southern tradition to have black-eyed peas on New Year's Day to bring good luck in the year ahead. Instead of just eating a spoonful, try this recipe which puts a different spin on an ol' black-eyed pea and you just might think you're eating meat! Poor Man's Sausage - Cowboy Kent Rollins
Ingredients
- 1 15 oz can black eyed peas
- 2/3 cup all purpose flour

small yellow onion
diced

egg
beaten
- 1 tsp red pepper flakes
- 1/2 tsp sage
- 1/2 tsp celery salt
- 1/2 tsp cumin
- 1 tsp baking powder

Kent Rollins' Original Seasoning
or all purpose seasoning of your choice
- 3 tbsp cooking oil
Instructions
In a small saucepan, bring the peas to a boil then simmer about 4-5 minutes, stirring occasionally. Drain.
In a mixing bowl, combine the flour, onion, egg and seasonings.
Stir in the peas and mash until smooth and combined.
Flour your hands and pinch off about a heaping tablespoon size of the mixtures and form into balls. Press down to form a patty.
Heat the cooking grease over medium heat. Fry the patties until golden brown. Serve warm or at room temp.
