Poor Man's Sausage


It's a Southern tradition to have black-eyed peas on New Year's Day to bring good luck in the year ahead. Instead of just eating a spoonful, try this recipe which puts a different spin on an ol' black-eyed pea and you just might think you're eating meat! Poor Man's Sausage - Cowboy Kent Rollins

Ingredients

  • 1 15 oz can black eyed peas

  • 2/3 cup all purpose flour

  • 1/2 small yellow onion

    diced

  • 1 egg

    beaten

  • 1 tsp red pepper flakes

  • 1/2 tsp sage

  • 1/2 tsp celery salt

  • 1/2 tsp cumin

  • 1 tsp baking powder

  • 2 tsp Kent Rollins' Original Seasoning

    or all purpose seasoning of your choice

  • 3 tbsp cooking oil

Instructions

  1. In a small saucepan, bring the peas to a boil then simmer about 4-5 minutes, stirring occasionally. Drain.

  2. In a mixing bowl, combine the flour, onion, egg and seasonings.

  3. Stir in the peas and mash until smooth and combined.

  4. Flour your hands and pinch off about a heaping tablespoon size of the mixtures and form into balls. Press down to form a patty.

  5. Heat the cooking grease over medium heat. Fry the patties until golden brown. Serve warm or at room temp.
