Jalapeño Popper Dip with Cheese and Bacon
I have made a whole lot of jalapeño poppers through the years. You cut every pepper in half, fill it with cream cheese, wrap it in bacon, secure it with a toothpick, brush it with barbecue sauce, and then cook it. They are mighty good, but that is a fair amount of work when you are feeding a crowd. This easy jalapeño popper dip gives you those same creamy, smoky, cheesy flavors without having to assemble every popper one at a time.

All the Jalapeño Popper Flavor in One Dish
The base starts with softened cream cheese and sour cream. The cream cheese makes the dip rich and thick, while the sour cream keeps it smooth enough for dipping. Barbecue sauce adds a little sweetness and smoke that goes especially well with the bacon and jalapeños.
Tip: Let the cream cheese come to room temperature before mixing. Soft cream cheese blends more easily with the sour cream and helps keep the finished dip smooth.
Cheddar cheese brings everything together. Garlic powder and onion powder add plenty of savory flavor without making the filling complicated. Real bacon bits save time and keep you from having to fry a batch of bacon and clean up the grease splatter afterward.
Stir in two diced jalapeños. You can remove the seeds and membranes for a gentler flavor or leave some of them in when you want more heat.
Tip: Adjust the heat before mixing. For a milder dip, remove the white membranes and seeds from the diced jalapeños. If your crowd likes more heat, leave some of the membrane in or add a few extra jalapeño slices on top.
Give the Dip a Golden, Crispy Topping
What sets this baked jalapeño popper dip apart is the topping. Combine panko breadcrumbs with bacon grease, softened butter, and shredded Parmesan cheese. That mixture gives the top a crisp, golden crust while the dip underneath stays creamy.
Finish it with thin jalapeño slices so everybody knows what is waiting inside. Bake the dip at 400°F for about 15 minutes, just until it is warmed through and the top is golden brown. Keep an eye on it near the end because you want that crust browned, not burned.
You can bake the dip in a 10-inch Dutch oven, a cast-iron skillet, or a 9-by-9-inch baking dish. I like cast iron because it holds the heat well and keeps the dip warm when you set it out for folks to enjoy.
Tip: The dip only needs to bake until the filling is hot and the Parmesan-panko topping is golden. Start checking it around the 15-minute mark so the crust does not get too dark.
