Asian Fried Rice with Uncle Roger


About three years ago, I featured my Cowboy Fried Rice recipe on our YouTube Channel. Soon after, I started getting phone calls from people telling me that a popular YouTube personality was making fun of some of my cooking methods on the chuckwagon. It was pretty funny, so we got in touch and I convinced Uncle Roger to come all the way to Oklahoma and show me how to make fried rice, HIS way.

Authentic Fried Rice - Cowboy Kent Rollins & Uncle Roger

Ingredients

  • 2 tbsp pork lard

  • 3 large garlic cloves

    minced

  • 1 bulb shallot

    minced

  • 2 Bird's Eye or Thai Chili

    diced

  • 2 links Chinese Sausage (or andouille, chorizo)

    sliced

  • 1 egg

    beaten

  • 1 egg yolk

    beaten

  • 3-4 cups white rice

    cooked & chilled

  • 1 tbsp soy sauce

  • 1 tbsp white pepper

  • 1 tbsp MSG

  • 3 green onions

    chopped

Instructions

  1. Oil the wok or large cast iron skillet with pork lard.

  2. Add the garlic, shallot, and chilies and cook for 1 minute, stirring constantly.

  3. Stir in the sausage and cook for 2 minutes, stirring occasionally.

  4. Add the egg, stirring constantly. Slowly stir in the rice.

  5. Season to taste with the soy sauce, sesame oil, white pepper, and MSG.

  6. Top with green onions and serve warm.
