Perfect Grilled Cheese

When Shan and I decided to do a Tomato Gravy recipe, it was a no-brainer to include a grilled cheese sandwich to eat with it. I knew I needed to turn to the real expert in the family. When it comes to cheese, Shannon is the one I'd put up against any fancy chef.

Making the Perfect Grilled Cheese

Start with a thick bread like Texas toast. Leaving the bread out for a few minutes helps dry it slightly so it toasts better on the griddle.


Butter both sides of the bread and place it on a warm griddle to lightly toast.

Tip: To add a little extra crunch, sprinkle a bit of Parmesan cheese on the outside of the bread before flipping.

Once the inside of the bread is lightly toasted, add your cheese. American cheese gives that classic melt, and adding a slice of cheddar brings extra flavor.


Cook the sandwich over medium low heat so the cheese melts slowly while the bread becomes golden and crisp.


If your bread is thick, you can briefly cover the sandwich to trap a little steam and help melt the cheese.

Serving the Cowboy Way

Now comes the fun part.


Take that hot grilled cheese sandwich and pour a generous ladle of tomato gravy right over the top.


It may sound unusual, but once you taste it you will understand why this pairing works so well. The richness of the gravy, the bacon, the tangy tomatoes, and the buttery grilled cheese come together in one incredible bite.
