While cowboy cooks did not layer noodles out on the trail, they knew how to make a hearty meat and tomato stew to feed a crowd. Lasagna soup carries that spirit forward.

Lasagna soup is everything you love about the classic dish, only easier and made in one pot. It is rich, filling, and perfect for chilly evenings. homemade version, cowboy style, right from scratch.

Easy Lasagna Soup Directions

Brown ground chuck and sauté with diced onion and minced garlic. Add green chilies, beef broth, and marinara sauce. Sprinkle in Italian seasoning and stir well. Break lasagna noodles into pieces and add them to the pot. Simmer until tender. 

Finish with a dollop of blended ricotta and parmesan, and a bit of chopped parsley.
