McDonald's McGriddle Remake - Cowboy Kent Rollins

Ingredients

  • 2 6 ounce pork sausage patties
  • 1 ½ cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 3 large eggs divided
  • 1 ½ cups milk
  • 4 tablespoons butter divided
  • cup maple syrup plus more for drizzling
  • 2 tablespoons heavy cream
  • 2 slices American cheese
  • Coarse ground black pepper for sprinkling

Instructions

  • Form the sausage into 2 patties. Add the patties to a cast iron skillet or griddle over medium-high heat and cook until browned on both sides. Set aside in a warm spot.
  • Whisk together the flour, baking powder, salt and sugar in a medium bowl. Whisk in the milk, 1 egg and ⅓ cup maple syrup, until smooth.
  • Return to the skillet or griddle and melt 1 tablespoon of the butter. Place an egg ring on the butter (see note), spoon about 2 tablespoons of the batter inside the ring and drizzle about 1 to 2 tablespoons of maple syrup on top. Top with an additional 2 tablespoons of batter.
  • Let the batter cook until the sides set up slightly, so when the ring is removed, the batter doesn’t spread out. Remove the ring, continue cooking until the underside is golden brown. Flip over and continue cooking until the other side is golden brown. Remove from the heat and place in a warm spot. Repeat the steps to cook 3 more buns.
  • Crack the remaining 2 eggs in a small bowl and whisk in the cream. Grease the skillet or griddle and pour the eggs in 2 separate rectangles. As the eggs cook, rip the cheese slices in half and top each egg with 1 slice of the cheese down the middle. As the eggs set up, fold the egg edges over to form a square. Finish cooking the egg to desired doneness. Sprinkle with pepper. *Alternatively, you can scramble or fry the eggs.

Notes

To cook the buns use approximately a 4-inch egg or cooking ring. We removed the tops and bottoms from a tuna can.
