McGriddle Remake

Howdy folks, and thanks for stopping by the website! I recently had me a McGriddle from McDonalds, and it was mighty tasty. Of course, I always want to do my best to put a Cowboy spin on great food like this. The maple flavor in the sausage and pancakes is fantastic, so Im keeping that, and adding some egg and of course, more meat. I want a breakfast that will fill up a cowboy until lunch.

The Sausage

You can make this recipe on an outdoor griddle, inside on one of those countertop griddles, or using a good old fashioned cast iron skillet.

Tip: Use a metal ring (think of a circular metal cookie cutter) to measure out your eggs and pancakes on the griddle. This will keep everything in the sandwich about the same size.

Start by cooking up the sausage. Make it just a little wider than the size you’re going to make the pancakes – the meat will cook down a bit. When finished, keep it warm off to the side.

Tip: Add a little maple syrup to the outside of the sausage right before you set it aside.

The Pancakes

Whip up the pancake batter as per the directions. Note: this batter is going to be a little thicker than a traditional pancake, and some of the maple syrup goes right in the batter. Don’t put the syrup away, though, because you’re going to want to add more later on.

Lay out the metal ring on the pre-heated griddle. Grease the ring and the griddle. Pour the batter in the griddle, just about 1/2 inch thick. Pour a little maple syrup over the top. Once the pancake is set up, remove the ring. Repeat until you have two pancakes for each sandwich you want to make.

The Eggs

Now, I thought about scrambling up an egg and adding it to the sandwich, but I figured it might be even better if we added a little mini-omelet instead. Don’t use the ring for this, just whip up an egg a little, and pour out over the heated skillet. Add the cheese to the center, and fold over, so you have a very thin little omelet with cheese inside.

Tip: Mix up about a teaspoon of Hatch Green Chile into the eggs before cooking.

McDonalds makes the eggs flat and folds them over, as well, so this matches up with the original McGriddle. The cheese is optional, but I think it adds great flavor and texture to the sandwich.

The Cowboy McGriddle

Put the sandwich together – two pancakes with egg, cheese, and sausage. Dig in, and enjoy. We sure did!

McDonald’s McGriddle Remake – Cowboy Kent Rollins

Ingredients

  • 2 6 ounce pork sausage patties
  • 1 ½ cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 3 large eggs divided
  • 1 ½ cups milk
  • 4 tablespoons butter divided
  • cup maple syrup plus more for drizzling
  • 2 tablespoons heavy cream
  • 2 slices American cheese
  • Coarse ground black pepper for sprinkling

Instructions

  • Form the sausage into 2 patties. Add the patties to a cast iron skillet or griddle over medium-high heat and cook until browned on both sides. Set aside in a warm spot.
  • Whisk together the flour, baking powder, salt and sugar in a medium bowl. Whisk in the milk, 1 egg and ⅓ cup maple syrup, until smooth.
  • Return to the skillet or griddle and melt 1 tablespoon of the butter. Place an egg ring on the butter (see note), spoon about 2 tablespoons of the batter inside the ring and drizzle about 1 to 2 tablespoons of maple syrup on top. Top with an additional 2 tablespoons of batter.
  • Let the batter cook until the sides set up slightly, so when the ring is removed, the batter doesn’t spread out. Remove the ring, continue cooking until the underside is golden brown. Flip over and continue cooking until the other side is golden brown. Remove from the heat and place in a warm spot. Repeat the steps to cook 3 more buns.
  • Crack the remaining 2 eggs in a small bowl and whisk in the cream. Grease the skillet or griddle and pour the eggs in 2 separate rectangles. As the eggs cook, rip the cheese slices in half and top each egg with 1 slice of the cheese down the middle. As the eggs set up, fold the egg edges over to form a square. Finish cooking the egg to desired doneness. Sprinkle with pepper. *Alternatively, you can scramble or fry the eggs.

Notes

To cook the buns use approximately a 4-inch egg or cooking ring. We removed the tops and bottoms from a tuna can.
