Coffee Cake

You know what goes really well with a cup of Cowboy Coffee? Homemade coffee cake with a simple brown sugar crumble. This is a simple recipe and great for folks learning how to bake.

Brown Sugar Cinnamon Topping

In a medium mixing bowl, mix up the white sugar, brown sugar, salt, and ground cinnamon (don’t mistake the cumin for the cinnamon. I’m speaking from personal experience!). Mix in the sliced or cut butter, and cut in with a fork until the entire mixture is the consistency of cracker crumbs. This will be the topping!

Coffee Cake

Start with a yellow cake mix – you can use any one you like the best. Mix up the batter as the box directions say. Cake mixes these days are good, and they aren’t cheating! It’s a way to save time and money, and you can always use them to start a recipe that’s a little fancier than the cake, like we’re doing here.

Once the batter is ready, add the vanilla and cinnamon.

Baking the Coffee Cake

Today, I’m cooking indoors – that’s unusual but my county has a burn ban right now. Since our outdoor film set is near the house, I’m going to bake this in a 9×13 or similar sized casserole dish in our oven.

Grease the pan with spray oil, or rub it with butter to prevent the cake from sticking.

Start by adding half of the batter into the dish or Dutch oven, if you’re cooking outside. Sprinkle half of the brown sugar cinnamon topping evenly over the batter. Pour the second half of batter over the top. Don’t add the rest of the crumble yet!

Cook for 15 minutes, and then add the crumble topping. This will keep the top layer of crumble just a little separate from the cake. Serve with Cowboy Coffee.

Coffee Cake with Crumb Topping – Cowboy Kent Rollins

Ingredients

Topping

  • 1 cup light brown sugar
  • 1 1/4 cups all-purpose flour
  • ½ teaspoon salt
  • 3 teaspoons cinnamon
  • 1 ½ sticks butter chilled

Cake

  • 1 box yellow cake mix plus ingredients listed on box
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon

Instructions

  • Preheat the oven to 350 degrees F. Butter a 9×13-inch baking dish.
  • In a small bowl, combine the topping ingredients, except the butter. Cut the butter into the mixture with a fork, pastry cutter or your hands until the mixture is crumbly. Be sure not to overwork, you want some larger chunks to remain.
  • In a medium bowl, beat together the cake mix, ingredients listed on the box, vanilla and cinnamon until smooth.
  • Pour half the batter into the prepared baking dish. Sprinkle half of the topping mixture on top. Evenly pour over the remaining cake batter on top. Use a spatula to carefully spread the mixture, if needed.
  • Bake for 15 minutes. Remove the cake from the oven and top with the remaining topping mixture. Bake for 15 minutes, or until the cake is set and the top browns slightly.
  • Serve warm or at room temperature.
