Ingredients

2 pounds frozen tater tots

Peanut oil, for frying

1 cup bacon grease (mixed with the frying oil)

1½ cups shredded sharp cheddar cheese

8 slices bacon, cooked and crumbled

½ cup sliced pickled jalapeños

4 green onions, sliced

Original Seasoning, to taste
Dressing
-
1 cup mayonnaise
-
½ cup sour cream
-
1 (1-ounce) packet ranch seasoning mix
-
3-4 tablespoons pickled jalapeño juice
Directions
- Heat peanut oil with about 1 cup of bacon grease to 350°F.
- Fry the tater tots until golden brown and extra crispy. Transfer to a paper towel-lined pan and let cool completely.
- In a large bowl, whisk together the mayonnaise, sour cream, ranch seasoning and jalapeño juice until smooth.
- Add the cooled tater tots, cheddar cheese, bacon, jalapeños and green onions.
Just before serving, pour the dressing over the top and gently fold until everything is coated without breaking up the tots.
- Season lightly with Original Seasoning.
- Serve immediately.
Recipe Note
Wait to mix the dressing with the tater tots until just before serving so they stay crispy instead of getting soggy.
