Egg in a Hole Breakfast Sandwich
Howdy folks, and thanks for stopping by the website! I was playing around in the kitchen and came up with a way to take the traditional egg in a hole breakfast recipe and cowboy it up a little so that everyone has a full stomach until lunch time. If you love breakfast food, this recipe is for YOU.
If you've never heard of egg in a hole, that's a shame, because it's a delicious breakfast! Traditionally, using a cookie cutter or small glass, you'd cut a circle in the middle of a piece of bread. Next, you'd get the skillet really hot so the egg can set up right away, and put the bread in the pan and crack the egg right in the middle of the piece of bread. You flip it and when the toast is crispy and the egg is cooked, you serve it and the bread circle that you cut out serves as a receptacle to dip into the egg yolk. It's a thing of beauty, it is.

Y'all know that the cowboy likes to have some meat in his breakfasts, so I've come up with an egg in the hole sandwich. Take 6-8 ounces of breakfast sausage and press it flat. You can use a little water to keep the sausage from sticking to the surface. I like to press the sausage between two wet pieces of tin foil until it's about an inch wider than the shape of the bread.
Tip: Use a little water on your hands to keep the sausage from sticking.
Cook the sausage over medium/high heat until thoroughly cooked, then set aside.
Make it a Breakfast Sandwich
Egg in a Hole
Get a second skillet hot for the eggs in a hole. Melt a good pat of butter - enough to toast both sides of both pieces of bread with. Cut the middle out of the bread and soak up some of the butter in the pan with both sides. When the pan is hot enough for the egg to set, crack an egg into each hole. Slightly scramble the egg up as soon as you crack it in, mixing in the green onion.
When the egg has set up, flip each piece of bread. Cover the cooked side of the egg in a hole with cheese. When melted, flip and cover the other side with cheese. When the cheese is melty and the bread is toasted, put the sausage in between the two pieces of bread and have yourself a breakfast feast!
This recipe would go great with some Cowboy Chutney or Authentic Red Chile Salsa! Heck, try it with both!
