2 Easy Spam Recipes!
Today folks we will be working with SPAM. We aren't talking about the ads that fill your email box. We are talking about that versatile canned meat.more
Now someone once told me that SPAM stands for "Something Posing As Meat."Well folks I don't believe that, this stuff is good.
We're sharing two easy ways to prepare SPAM that will transform it from just being from the can.
SPAM Balls
Take the SPAM and grate it into a bowl. Let's mix in a can of Hatch green chiles (I prefer Hatch brand, but any will do). Then mix in some shredded cheese, fresh chopped onion, mayo, and some minced garlic. Mix all this together into a consistency to make a nice meatball that will hold together.
With your hands, form the mixture into about 8 to 10 golfball-sized balls.
I then take two eggs well beaten and brush them on the SPAM. Then go ahead and roll them around generously into some Panko bread crumbs. I love to use Panko because they give such a good crunch when fried.
Add enough fry oil (such as peanut) to a deep fryer or Dutch oven to deep fry and heat to 350 degrees F. Go ahead and add the SPAM balls one at a time. As they fry occasionally rotate them so they evenly brown.
After about 3-4 minutes of bathing in that hot peanut oil until they are golden brown, you can take them out and let them drain on a wire rack or a paper towel. Give them a few minutes to cool, because they are hot enough to burn the hair off a frogs butt!

SPAM Breakfast Hash
As promised folks, I said I would give you SPAM two ways and two ways it is with this next delicacy of a good breakfast hash!
To start this out you will take 1/2 pound of your favorite breakfast pork sausage. Add it to your cast iron skillet and break it up a bit... you know me, I like to use my Mesquite Spatula. Next up you will want to pop a top again on a can of SPAM and chuck that up into cubes.
After doing this if you're a multi-tasker, your pork should be just starting to brown up a little. This is the perfect time to add in some onion and some jalapeno and about 2 cups of chunked potatoes (we're using frozen Ore Ida potatoes that have been thawed).
Go ahead and let that cook a few minutes, stirring occasionally.
Now, let's not forget the star of the show, SPAM.
Go ahead and stir that SPAM in with the other contestants. Once this is all mixed into the skillet you can give it a good sprinkling of Red River Ranch Mesquite. Continue cooking until those potatoes and onions soften and the sausage has cooked through.
At this point you can remove it from the fire and smother it with some good shredded cheese, of your choosing of course.

Ok, now we can go ahead and fry us up 3 eggs. I like to top my hash with the eggs but you can go-ahead and eat them on the side too, you won't hurt my feelings..
