Cranberry Barbecue Turkey Sliders
Thanksgiving is wrapped up and the dishes are finally put away, but the leftovers are taking up all of the room in the ice box. Now this is my favorite part of the holiday. When things slow down a bit and we can take all that good food and turn it into something brand new. Today I have a recipe that takes leftover turkey and turns it into the best little sliders you ever set on a plate. It is quick, easy, and full of that sweet and smoky holiday flavor.

Warm the Turkey
Start by getting both dark and white meat cut up and into a warm skillet. I like to run the heat about medium because the goal is not to recook anything. All you are doing is waking the turkey back up and letting a little sizzle bring it back to life. It will start to soften and warm through as it cooks.
Tip: Warming the turkey slowly keeps it from drying out.
Spice up the Cranberry Sauce
In a bowl, stir together leftover cranberry sauce, your favorite barbecue sauce, a splash of Worcestershire, and just let it come together. Let this mixture simmer a few minutes so the cranberry melts into the barbecue. When it is blended smooth, pour it over the warm turkey and stir until every piece is coated.
Tip: Simmering the sauce first helps the cranberry dissolve and keeps the sauce from being lumpy.
Build the Sliders
Set the turkey on a cooler spot on the grill or stovetop so it stays warm without bubbling. Toast your rolls. Pretzel rolls work great here but Hawaiian rolls are another good option. Once they are toasted, spoon the turkey mixture on each roll. Add pickled jalapenos for a little bite and a slice of provolone so it melts down over the turkey. Brush the tops with butter and sprinkle with everything bagel seasoning.
Tip: Butter and seasoning on the tops add crunch and flavor that make these sliders stand out.
These sliders are warm and sweet, with just a little heat from the jalapeno. Even if turkey is not your favorite main dish, it makes a mighty fine sandwich the day after. This is a quick way to feed a hungry crowd without much effort and without wasting anything left from the big feast.
