Crispy Fried Catfish

Ingredients

  • Catfish Filets this recipe works well for about 2-3 large filets
  • 1 cup cornmeal
  • 1/3 cup all-purpose flour
  • 1– 1 ½ tablespoons Red River Ranch Original Seasoning or all-purpose seasoning
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1 tablespoon buttermilk powder
  • 1 cup warm water
  • Canola peanut or other fry oil

Instructions

  • In a medium bowl combine the cornmeal, flour and seasoning. Set aside.
  • In a small bowl, combine the cornstarch, baking powder, buttermilk and warm water.
  • Cut the catfish filets into thirds. Dip in the wet mixture and then dredget through the flour mixtures. Repeat.
  • Heat the oil to 350 degrees in a cast iron Dutch oven or deep fryer.
  • Fry the catfish until golden brown and crust is crispy.
  • Let cool on a paper towel or wire rack.
