Red Eye Gravy and Ham Steak

Ingredients

  • 1 12 to 14 ounce ham steak
  • 2 tablespoons bacon grease
  • 1 tablespoon butter
  • 2 to 3 tablespoons all-purpose flour
  • 1 to 1 ½ cups brewed coffee
  • 2 teaspoons black pepper

Instructions

  • Heat a large cast iron skillet over medium-high heat. Add the ham and cook for 4 to 5 minutes, each side. Place the ham on a large plate and set aside.
  • Remove the skillet from heat and let it cool for about 5 minutes.
  • Place the same skillet over medium low heat. Add the bacon grease and butter and cook until melted. Sift in the four and stir until smooth with a flat spatula.
  • Stir in the coffee, a little at a time. Bring to a boil, stirring occasionally. Sprinkle in the pepper and continue to cook for about 3 to 4 minutes until it reaches the desired consistency.
  • Remove from the heat and let cool slightly. Pour over ham and serve immediately.
