Add the sausage to a large skillet over medium heat. Cook until about halfway browned, stirring occasionally.
Stir in the onion, jalapeno and potatoes. Cook a few minutes, stirring occasionally.
Stir in the spam. Continue cooking until the potatoes and onions are tender and the pork has completely cooked through. Season with salt and pepper, to taste.
Sprinkle with the cheese. Cover and set aside in a warm place.
Fry the eggs in a medium skillet until over easy to over medium (see tip). Top the hash with the eggs. Serve immediately.
