In a medium bowl, mix together the spam, mayonnaise, onion, garlic, green chiles and cheese. Slowly mix in the mayonnaise until the consistency will create a ball that forms together.
With your hands, form the mixture into about 8 to 10 golfball-sized balls.
Brush the balls with the eggs and then roll to coat generously in the bread crumbs.
Add enough oil to a Dutch oven or fryer to deep fry the spam balls and heat to 350 degrees F.
Add the spam to the oil a few at a time and fry for about 4 minutes, rolling around occasionally, or until they are golden brown.
Drain on a paper towel or wire rack. Serve warm.
