Fried Spam Balls - Cowboy Kent Rollins

Servings 8 to 10 balls

Ingredients

  • 1 12-ounce can Spam grated
  • cup mayonnaise
  • ½ cup white onion minced
  • 3 garlic cloves minced
  • 1 4-ounce can chopped Hatch green chilies drained
  • ¾ cup shredded cheddar cheese
  • 2 large eggs beaten
  • 2-3 cups Panko bread crumbs
  • Oil for deep frying

Instructions

  • In a medium bowl, mix together the spam, mayonnaise, onion, garlic, green chiles and cheese. Slowly mix in the mayonnaise until the consistency will create a ball that forms together.
  • With your hands, form the mixture into about 8 to 10 golfball-sized balls.
  • Brush the balls with the eggs and then roll to coat generously in the bread crumbs.
  • Add enough oil to a Dutch oven or fryer to deep fry the spam balls and heat to 350 degrees F.
  • Add the spam to the oil a few at a time and fry for about 4 minutes, rolling around occasionally, or until they are golden brown.
  • Drain on a paper towel or wire rack. Serve warm.
