Ranch Fried Potatoes - Cowboy Kent Rollins

Ingredients

  • 6 slices thick-cut bacon
  • 2 tablespoons cooking oil
  • 4 russet potatoes thinly sliced into rounds
  • 1 green bell pepper chopped
  • 1 medium yellow onion chopped
  • 2 garlic cloves minced

Instructions

  • Cut the bacon into about 1-inch pieces and add to a large cast iron skillet over medium-high heat. As the bacon begins to cook, add the cooking oil. Stir in the potatoes, bell pepper and onion.
  • Cover and let cook about 15 minutes, stirring occasionally.
  • Stir in the garlic and season to taste. Replace the cover and continue cooking 10 more minutes or until the potatoes are fork tender.

Notes

Merilyn’s Tip: For a faster cook, you can add a little water while cooking to steam the potatoes. You can also cook the bacon ahead of time and add to the dish about 10 minutes before finished cooking or until heated through.
