Kent Rollins' Hambeens 15 Bean Soup

15 Bean Soup - Cowboy Kent Rollins

Ingredients

  • 1 20 oz bag Hurst 15 bean soup
  • 3 guajillo peppers crushed
  • 2 garlic cloves minced
  • 5 thick-cut slices bacon cut into 1-inch pieces
  • 1 ½ tablespoons ancho chili powder
  • 1 ½ to 2 lbs Bratwurst Kielbasa, etc., cut into slices
  • 4 to 5 tablespoons Hatch green chiles

Instructions

  • In a medium pot add the beans and cover with about 2 inches of water. Place over medium-high heat.
  • Stir in the guajillo peppers, garlic and bacon. Cover and bring to a boil for 30 minutes.
  • Reduce heat to medium and add stir in the Seasoning packet, provided in the bean package. Stir in the ancho chili powder and cover and cook for 15 to 20 minutes, stirring occasionally. Be sure to add hot water, if needed while the beans are cooking so they aren’t too dry.
  • Stir in the sausage and green chiles. Cover and continue to cook for an additional 1 to 1 ½ hours, or until the beans are tender.
  • Serve with cornbread, tortillas or crackers.

Notes

Note: For higher elevations, you can soak the beans in cold water for 4 to 6 hours.
