Taco Bell Mexican Pizza - Cowboy Kent Rollins

Ingredients

  • 1 lb. 80/20 ground beef
  • ½ tablespoon Kent’s Original seasoning or salt and pepper
  • 1 small white onion finely chopped
  • 1 tablespoon plus 2 teaspoons taco seasoning divided
  • 1 ½ cups shredded cheddar cheese divided
  • 4 9-inch flour tortillas
  • Corn masa for sprinkling
  • Oil for frying
  • 1 8 ounce can tomato sauce
  • 1 4.5 ounce can diced green chilies
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon red pepper flakes
  • 1 teaspoon white vinegar
  • 1 16 ounce can refried beans
  • 2 tablespoons butter
  • 2 - 3 tablespoons sour cream
  • 1 cup shredded mozzarella
  • 2 roma tomato finely chopped
  • 2 jalapenos thinly sliced

Instructions

  • In a medium cast iron skillet, add the ground beef over medium heat. Season with Original Seasoning, or salt and pepper. Cook until the meat begins to brown, stirring occasionally.
  • Stir in the onion and1 tablespoon taco seasoning. Continue cooking until the meat has completely browned. Stir in ½ cup of cheddar cheese and stir just until melted. Set aside in a warm spot.
  • In a large cast iron skillet, pour about ½ to ¾-inch of the fry oil in and heat to 350 degrees F. over medium-high heat.
  • Sprinkle the corn masa on both sides of a tortilla and shake off any excess. Fry until a light golden brown on each side, and place on a wire rack to cool. Repeat with the remaining tortillas. Be careful not to over cook the tortillas. They should be lightly crisp around the edges, but still pliable in the middle.
  • In a small saucepan combine the tomato sauce, green chilies, smoked paprika, cumin, garlic powder, onion powder, pepper flakes and vinegar. Bring to a simmer stirring frequently. Pour the contents into a blender and blend until smooth. Set aside.
  • In a medium saucepan over medium heat add the beans, and stir well, then add the butter, sourcream, and seasoning and stir well, cook for about 3 to 4 minutes, or until heated through.
  • Spread a layer of the beans on a tortilla, followed by meat, sauce and about ½ cup of the mixed cheeses. Top with a tortilla. Spread an even layer of sauce on top, followed by about ½ cup of mixed cheeses and jalapenos. Repeat to assemble the other pizza.
  • Place the pizzas on a baking sheet and into a preheated oven to 350 degrees F. Bake for about 4 minutes, switch the oven to broil and broil just until the top cheese melts. Remove from the oven, top with tomatoes and serve.
