There it is. There it is. HST ham beans
0:14
We're gonna have us a feast tonight. Are
0:29
y'all tired of turkey? All the leftovers. There's just so much you can do with them
0:33
I think we should move on. Leave Thanksgiving behind them. What are we talking about
0:38
15 bean soup? Don't get no better than that. A full meal right here in a package
0:46
You know, we're really proud to, to have hurst ham beans. Sponsor this video
0:50
These are for bean loving people. Everybody that likes a bean. Your favorite bean is in this sack
0:56
It is. And more than that there is a flavor packet inside because somebody says
1:01
well, I was gonna make some beans but I didn't have a recipe or I don't know, remember the recipe
1:05
You have got the recipe in the sack. Folks. There's just a unique blend of flavor that comes from all these beans
1:12
Now, I grew up, the only thing we ever eat was pinto beans. We'd have a lima bean on occasion
1:16
A navy bean on occasion. There's so much flavor that each bean brings into this
1:21
I'm not a bean fan. I feel like I could find at least one bean in there that I
1:26
hey, there is some beans in there to please the pickiest bean eater in the world
1:30
They are 75 years. They've been doing beans. These folks know some beans
1:36
I guarantee you that I was in my side forming inert in our ambling favorites
1:45
and, but I am gonna cowboy it up. I am, I'm gonna get me some dried chilies in there to bring about some of that
1:53
Mexican flavor that I love. But we just wanna get enough water in that pot that you're just covering them beans to start out with
1:59
We're gonna put it over medium heat and go to town while them beans is coming on up to a simmer
2:05
It is time to assemble. What gonna go in there first? Now to me
2:09
I've always seasoned beans at intervals when we start. Now there's enough water in there just about this much to cover up them beans
2:16
But as you cook beans along, you're gonna have to add a little water to them on occasion
2:21
But we're gonna start out with little chilies because there's a nutty flavor that comes out in there
2:26
A little bit of smoke and we're gonna see if we can crumble them
2:30
The wind today is blowing how much in, I mean, 8585 it is going pretty good
2:36
It is. So we're gonna see if we can get these mashed up before they blow away
2:40
These are gonna rehydrate in there and bring us a deep dark red
2:44
richer color and that's what we're after. So, two garlic cloves in there and you just go to mashing them in here and we want
2:50
them to get blended in with that chili flavor. We do. But guess what
2:54
You got to have some hog meat to go in there too. I've got probably 4 to 5 slices of bacon here or something like
3:02
that. And I just like to cue them in sort of pieces about so
3:08
but if you got a Hamham hock smoked hog gel, whatever you wanna put in there
3:12
Now, the meat I'm gonna pair up with is today that's really gonna help bring these beans into a complete meal to me
3:18
And that is from a previous video we did our Mexican bratwurst sausage
3:23
Oh my gosh, folks smoked up all good with some great flavors in there
3:27
Slice that up as them beans get closer to getting done. Let all that smoke and that goodness of sausage just blend right in there
3:33
But let's get this in the pot so it can go to adding flavor. Well
4:01
we have been simmering along here and we have reached what I call a pretty good boil now
4:05
probably about 30 minutes into this process. Always keep me when I'm making beans
4:09
Either got hot water on the stove or hot water on Bertha. That way
4:13
I'm not what shocking them beans thinking are we going swimming or are we in the hot tub
4:18
Which one is it today? So, keep you some warm water going
4:21
I just try to keep enough in here to keep them beans just simmering along just to keep enough water above them to where we're
4:29
not just a bunch of broth and liquid, but it's gonna cook down to be just right
4:33
There's just something about these beans as they begin to cook and just begin to cook down that they
4:39
to me nearly automatically thicken as they're going along. But I never season beans to what right about right now is the right time
4:46
So I figure we've been on about 35 minutes. We have what
4:50
Hurst ham beans flavor packet? Gotta have it folks because that's what's gonna make things good
4:54
If we can get it in here without the wind blowing it away, it'll be a miracle
4:58
They even got one over there that what is a Cajun bean? You'll be liking that because it's got Cajun spices in it
5:05
But to that, remember I told you we gonna cowboy them up a little. I have ground me up some ancho chili
5:10
There's sort of a chocolate coco taste here that comes about. But you get that smoked flavor as well
5:16
We're just gonna let her keep on cooking. Always remember, you can cover the speed the process up a little but don't forget to check
5:24
on these beans. Stir them every once in a while because I have always known that sometimes in a pot
5:29
there's one bean that's lazy and he wants to lay down there at the bottom and then he gets burned and one burnt bean will
5:34
ruin a pot of beans if it gets a chance. So don't think this is a walk off method
5:39
Lor c cook these total time to get them good and done and tender the way we want them
5:43
You're probably looking at 2 to 2.5 hours depending on your altitude bean tips 101
5:52
things you should know before you go to the store to buy yourself some beans. Number one
5:57
How many people are you planning on feeding £1 of bean? Gonna feed about 10 hungry cowboys
6:02
Now, when you go to add meat to it or anything like that, you can increase your odds by about maybe 12 or three
6:08
but always try to have plenty of beans because beans to me are even better the next day warmed up
6:14
It just seems like they always get good. Now, where are you cooking them at? Are you at sea level or are you at 9000
6:21
ft down here at sea level? Bertha can cook a pot of beans in about 45 minutes but you get to 4000
6:27
Own up to 9000. You might wanna soak them beans if you need to soak with ice
6:32
cold water because beans can sour if they're in a hot temperature
6:35
I have poured them in a yeti ice chest, put ice in there to let them soak them, rinsed them
6:40
dumped them back in the pot, add water and cook them. But about four hours is a pretty good soaking time
6:45
But when I was at 8500 ft, when I was got nail hunters, I would soak beans sometime overnight to where I can make sure
6:52
that I was gonna cook them beans and they were gonna get tender. So people have told me
6:56
you know, sometimes I get a little gassy when I'm eating beans. But I heard an old man on a ranch
7:00
Tell me one time you can take a whole russet potato, drop it in a pot of beans
7:05
add a little soda to that. Cook them beans, the potato and the soda will soak up all the gas
7:11
Don't eat the tater folks. You blow up. I'm telling you that thing's like TNT
7:15
It's gonna let you go say you burnt one of them. Hey, you got two burnt beans lay in the bottom of the pot
7:21
I found out something that sort of takes the burn out but helps too if you over salt them beans
7:27
That is corn. Masa just use it like you were gonna use it if you were making like a corn starch to thicken something
7:33
But also tablespoon of peanut butter. You can take that peanut butter put in them beans
7:39
it'll soak up some of that burnt flavor to where you ain't lost nothing but remember
7:43
buy quality beans and what kind of beans are we buying? 15 bean soup beans
7:48
That's what we're doing from the Hearst Bean Company. Because you know them are gonna be right and you're gonna be the bean queen and
7:54
the bean king from now on. Well
8:14
we've been on about, probably close to 40 minutes now and I, I wanna show you a little something so you'll know when it's time
8:21
to add the rest of the goodness. Now I look for one of them Pinto beans
8:24
Oh, that one is hot. But get him up here to where we'll let Shan Zoom in here
8:30
See that bean is, the skin is cracked when it reaches the air
8:34
That's a good sign that we're gonna season, but he's still just a little bit hard
8:39
So he likes just a little getting plum done. We've had to add some water to it
8:44
Make sure that you remember to stir it. It is time to add some meat to the pot
8:48
It is like I was telling y'all in that previous video that we did that Mexican Bratwurst and you could
8:57
you wouldn't have to use this but go back and watch that video. It goes great in these beans
9:01
You could use a kalsa, you could use any smoked sausage that you want
9:05
You could use ground meat in there. But let's just get them all in there at this time because that's when this really needs to
9:11
go to flavoring up with them beans. Remember I said we're gonna cowboy this up even more
9:16
So we gotta have some good hatch green chilies from the fresh chili company
9:20
And us. It is. And we're gonna add, I would say about four tablespoonfuls because I wanna make sure that I know it's in there
9:28
So we're gonna give it a stir And folks, this is when things are gonna try to thicken up
9:32
even just a little bit more. So keep that hot water handy
9:36
You're gonna have to have it. And now we just like to that process to where we're cooking to lay them beans are getting really
9:42
good and tender and everything will be warm through. Hm. That dog will hunt right there
9:51
I mean, he'll go up to a bean tree and he'll point like whoop, there's a whole covey of beans in that tree
9:56
I am ready to eat me some of these. That
10:15
is a happy meal right there in a bowl. Remember one pop meal
10:19
one sack meal. You can't beat this deal. You can't. Now I'm gonna let them beans cool just a little before I slap them in
10:25
my mouth. But, you know, being able to cook for cowboys and on some really
10:30
really hard conditions at time, I can remember back in 2001 in the Paura Canyon and I'd seen cowboys right out that morning and I'd
10:39
heard the weather man say, hey, gonna come Blue Northern today and that old dirt is gonna blow
10:44
And I mean, about right after they rode out after lunch, I remember Old Cody Lewis turned around and looked at me and he said
10:51
I hope we're gonna have some beans for supper. Kent. I said we do her my friend by two o'clock
10:57
the sky was so dark that I lit a lantern under the fly just because the dirt was blowing so bad
11:02
And I had walls all the way around the fly, but it was just a rolling cloud of dust everywhere black
11:09
Then I remember sort of hearing it settle there. About seven cowboys was coming in and old Cody Lewis come through there under the fly
11:16
and he said, can't, it's always looked good to see that wagon, but it never looked as good as it did today
11:22
I got tired of choking dust and I'm so glad you're here and you got us something hot to eat and them boys eat a
11:28
lot of beans. Always know that beans are a great comfort food
11:32
And them boys been out there in that dirt storm all day fighting that cold and that old dirt just sticking to them everywhere
11:37
We're gonna make them a comfortable night, gonna feed them some beans, folks. That's what you can do with this meal
11:42
I hope you ain't cooking in a dirt storm. But hey, I'd be really liking to serve mine with cornbread
11:48
Like I said, man, I would take me a knife and I would cut that cornbread right down the middle
11:53
Pour that beans and cornbread over there. You get you a green onion and go to town
11:57
This is five star dining right here and it all come to you in one sack and one pot
12:02
I got some good help in camp today. I really have Big and Mage who wants to be first
12:09
Can you sit me, sit down there for me, buddy? Good job
12:12
And you wait. Ok, I'm gonna feed the Schnauzer first but I want you to wait
12:17
You got good manners. Thank you so much. And since you was so good
12:21
you're gonna get an extra bite. There you go, mate. You don't get no more
12:26
You're on a diet. Now me, I'm gonna have me a bite. Give me some of that good 15 bin soup
12:32
Some of that good Mexican sausage that I made. Hm. That right there will make you do the 15 bean shuffle
12:41
It will. Now you gotta have 15 steps in this. A one
12:45
a two, a 3456789, 1011, 1213, 1415. Back to the beans. We are
12:54
but a big shout out a big thank you to hurst ham beans for sponsoring this video
12:59
You can find them in the dry beans section at your favorite grocery store or you can order them online
13:04
These are some of the best beans you're ever gonna find. But it is with great pride
13:09
honor and privilege that I tip my hat to all our servicemen and women and all the veterans who have kept that old flag flying
13:15
over camp. Rest of you. Come on in here quick. Come on because I'm getting hungry and I ain't gonna fight the beagle off
13:20
God bless you each and every one and I'll see you down the best bean tree
13:26
As you can see when our stirring them begins begins. Yep. All the way around
13:33
Beans for breakfast, beans for supper. Beans in the middle. We had to have some beans
13:37
Hey, even that wasp on your hat. Like yes, he does love some beans too
13:42
That right there will make you do it. Oh my gosh. Oh, hang on a minute
13:50
What's Peso Dollar? I'm Peso Dollar singing about those delicious NK Hurst packaged ham beans
13:56
Here you go. I, I heard all my doggies and ponies. I longed for the dusk when
14:05
I, I cooked for a lot of cowboys and fed a lot of beans
14:10
but I've never seen somebody dressed up like these two kids and a guy walk into camp with a guitar
14:16
but I think I'm sort of liking it. So we're just gonna see what happens t in by forming and nourishing our handing favorites
14:28
And yes sir. First ham beans, a little packet of ham flavored in each bag cook them like you always do
14:36
And about two minutes before they're done, tear them in the packet and stir in that delicious ham flavor
14:41
Did you see that? Them kids lick this thing clean here. I thought I was singing for my supper
14:46
Not theirs. Oh my goodness. Check them boots out. Wing tip boots
14:54
Now, when a sharp pointed like that, we used to call them bug killers because I mean
14:59
you get a bug in a corner of a room and you could kick him with two of them boots
15:03
But, uh, hey, that was in style back then. It was pretty fancy
