Crispy Fried Catfish

I don't get a chance to wet a hook much anymore but there's one thing that I always remember from growing up is going to the pond and catching some catfish. Folks from all over the neighborhood would come to the house for a big ol' fish fry. Cornmeal is a staple in most of the fried fish recipes that I know of, but we're taking it a step further to create a great crispy crust for those little fish fellers.more

Crispy Fried Catfish

Ingredients

  • Catfish Filets

    this recipe works well for about 2-3 large filets
  • 1 cup cornmeal

  • 1/3 cup all-purpose flour

  • 1– 1 ½ tablespoons Red River Ranch Original Seasoning

    or all-purpose seasoning
  • 1 tablespoon cornstarch

  • 1 teaspoon baking powder

  • 1 tablespoon buttermilk powder

  • 1 cup warm water

  • Canola peanut or other fry oil

Instructions

  1. In a medium bowl combine the cornmeal, flour and seasoning. Set aside.
  2. In a small bowl, combine the cornstarch, baking powder, buttermilk and warm water.
  3. Cut the catfish filets into thirds. Dip in the wet mixture and then dredget through the flour mixtures. Repeat.
  4. Heat the oil to 350 degrees in a cast iron Dutch oven or deep fryer.
  5. Fry the catfish until golden brown and crust is crispy.
  6. Let cool on a paper towel or wire rack.
